Savoury scones make a super-easy lunchbox filler, light lunch or afternoon snack. Serve warm or cold with lashings of butter!
Savoury Scones
Ingredients:
2 cups self-raising flour (or 2 cups plain flour with 2 tsp baking powder added)
50g butter, cubed
4 slices ham, finely diced
1 spring onion, finely diced (or 2 tbs chives, finely diced)
1/2 cup red capsicum, finely diced
1 cup grated tasty cheese
2/3 cup milk
Method:
- Preheat oven to 180C and line a tray with baking paper.
- Place flour and butter into a bowl. Rub butter into flour until the mixture is crumbly. Stir in remaining ingredients until just combined.
- Tip mixture out onto a well floured surface. Using floured hands, pat mixture into a round shape approimately 4cms thick. Using a floured scone cutter or glass, cut out rounds of the mixture and place onto the oven tray. Re-combine the mixture into a round shape again and continue cutting out scones until all the mixture is used. Alternatively, you can pat the mixture out into a round, even shape and simply cut it into 8 even-sized wedges/triangles.
- Brush tops of scones with milk and sprinkle with a little extra cheese before baking (if desired). Bake for 20 minutes, or golden-brown.
Makes 6-8 large scones.
