We love the creamy pasta salad you can buy pre-made and packaged from the deli section of supermarkets, however it’s not the cheapest or freshest! This is a quick and easy creamy pasta salad I mix up when we are craving it, and it is great in the school lunchbox too.
Easy Creamy Pasta Salad
Ingredients:
250g dried macaroni pasta
1 carrot, grated
1 stick celery, finely diced
1/2 small red capsicum, finely diced
1 cup grated tasty cheese
1 tbs fresh parsley, finely diced
1/4 cup mayonnaise
1/4 cup sour cream
2 tbs milk
1/2 tsp dijon mustard
Salt & pepper, to taste
Method:
- Cook pasta in boiling water until al dente. Drain in a colander, then rinse under cold running water to cool. Leave to continue draining while you prepare the rest of the ingredients.
- In a small bowl or jug, combine mayonnaise, sour cream, milk, mustard, salt and pepper together.
- In a large bowl, combine cooled pasta, carrot, celery, capsicum, cheese, parsley and dressing, mix until combine. Allow to rest in fridge for at least 1 hour for pasta to absorb dressing.
