These easy and delicious Apple and Berry Scrolls are perfect for the lunchbox, freezer friendly and can be enjoyed hot or cold. Your choice of berries, combined with apple and cinnamon, turn this easy scroll recipe into a yummy treat that the whole family will love! You can use whatever berries you like, we love the combination of raspberries and blueberries with the apple!
Apple & Berry Scrolls
Ingredients:
2 cups self-raising flour (or 2 cups plain flour mixed with 2 tsp baking powder)
100 grams butter, cubed
2/3 cup milk
1 tbs butter, melted
1 tsp cinnamon
1 apple, peeled and diced
1/2 cup berries of your choice (fresh or frozen)
1 tsp sugar, optional
Method:
1. Preheat the oven to 200ºC and line an oven tray with baking paper.
2. Place the flour into a large bowl and then rub the cubed butter into the flour until the mixture resembles fine breadcrumbs. Mix through the milk, then turn the dough out onto a well-floured surface and knead until it forms a smooth ball. Roll the dough out to form a rectangle approximately 40cm x 30cm.
3. Brush the melted butter over the dough, sprinkle over the cinnamon, then the apple and berries, leaving a small gap around the edges. Carefully roll the dough from the long side to enclose the fruit until it forms log. Place in the fridge for 10 minutes to firm up.
4. Slice the log into 12 rounds and place onto the oven tray. Sprinkle over the sugar if using, and bake in the oven for about 20 minutes, or until the dough turns a golden-brown colour. Remove from oven and allow to cool for 10 minutes before eating, or cool completely before wrapping and freezing in an air-tight container for up to one month.
